Mushroom Poké Bowl

Indulge in the ultimate grain-free delight with this mouthwatering Mushroom Bowl! Packed with savoury mushrooms, roasted veggies and creamy avocado sauce, it’s a wholesome and flavourful feast that will leave you craving more.

Ingredients:

For the Mushroom Bowl:

* 1 pound SNOW OYSTER mushrooms @threecfarms
* 2 tablespoons olive oil
* 2 cloves garlic, minced
* 1 tablespoon soy sauce
* 1 tablespoon balsamic vinegar
* 1 teaspoon smoked paprika
* salt and pepper to taste

For the Roasted Vegetables:

* 1 large sweet potato, cubed
* 2 carrots, sliced
* 1 green pepper, sliced
* 1 tablespoon olive oil @getkristinas
* 1 teaspoon dried thyme
* salt and pepper to taste

For the Avocado Sauce:

* 1 ripe avocado
* Juice of 1 lime
* 2 tablespoons chopped fresh herbs
* 1 clove garlic, minced
* 2 tablespoons water (adjust as needed)
* salt and pepper to taste

For the Toppings:

* Fresh spinach or mixed greens
* Sliced cherry tomatoes
* Sliced cucumber
* Microgreens @ortalizafarms
* Sesame seeds (optional)

Preparation:

1. Preheat the oven to 400°F

2. In a bowl, toss the cubed sweet potato, sliced carrots, and red bell pepper with olive oil, dried thyme, salt, and pepper. Spread them in a single layer on a baking sheet and roast in the preheated oven for about 25-30 minutes or until the vegetables are tender and slightly caramelized.

3. While the vegetables are roasting, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for a minute until fragrant.

4. Add the sliced mushrooms to the skillet and cook for about 5-7 minutes until they start to release their moisture.

5. Stir in soy sauce, balsamic vinegar, smoked paprika, salt, and pepper. Cook for another 2-3 minutes until the mushrooms are tender and coated with the sauce. Remove from heat.

6. In a blender or food processor, combine the flesh of the avocado, lime juice, chopped cilantro, minced garlic, water, salt, and pepper. Blend until smooth and creamy. Adjust the consistency by adding more water if needed.

7. To assemble the mushroom bowl, start with a bed of fresh spinach or mixed greens. Add the roasted vegetables, sautéed mushrooms, sliced cherry tomatoes, sliced cucumber, and micro-greens.

8. Drizzle the avocado sauce generously over the bowl.

9. Sprinkle sesame seeds on top for an extra crunch and flavour if desired.

10. Serve the mushroom bowl fresh and enjoy!
