Sun-Dried Tomato Broccolini Pasta

This sun-dried tomato and broccolini pasta is my go-to quick weeknight meal that delivers on flavour. Turn that craving for carbs into a yummy meal with this healthy pasta recipe that is simple to prepare.

Ready in just over 20 minutes, this pasta dinner recipe is bursting with flavour from its sun-dried tomatoes, broccolini microgreens and parmigiano cheese.


  • pasta of choice (I used penne piccole rigate) @dececco
  • 3 cloves garlic, minced
  • ¼ cup of sun-dried tomatoes
  • arugula
  • broccolini microgreens @ortalizafarms
  • 3 tbsp olive oil @getkristinas
  • ½ tsp of salt
  • ¼ tsp fresh ground black pepper
  • 2 tsp red pepper flakes  optional
  • 3 tbsp Parmigiano cheese + more for serving
  • Reserve ¼ cup of pasta water


Bring salted water to a boil in a pot.

Cook pasta to al dente according to package instructions.

Before draining reserve ¼ a cup of the pasta water and place to the side.

While pasta is cooking, in a skillet over medium heat add 3 tbsp of olive oil.

Add minced garlic and cook until fragrant about 1 minute.

Add sun dried tomatoes, and salt pepper. Cook for 3-5 minutes until it begins to soften.

Add arugula and add 2 tbsp more olive oil to help arugula wilt.

Once arugula has wilted add pasta.

Add parmigiano cheese to the pasta.

Add a few tablespoons of the pasta water to help thin the cheese for it to coat the pasta.

Top with a handful of broccolini microgreens.
