One-Pot Creamy Tomato Tortellini Soup

This One-Pot Creamy Tomato Tortellini Soup recipe is the EASIEST homemade creamy tomato tortellini soup made from scratch! It’s loaded with fresh herbs, diced tomatoes and three-cheese tortellini.

-1 Basil, bunch fresh
-3 Garlic cloves, minced
-1 Onion, medium diced
-1/2 cup diced cherry tomatoes
-1/2 tsp Oregano, dried
-4 cups vegetable stock
-1 can Peeled Tomatoes, diced
-1/4 tsp Chili Pepper Flakes
-1/2 tsp Salt
-1-2 Tbsp Olive oil @getkristinas
-1/2 cup Heavy cream
-1/2 cup parmigiano cheese
-4 Large fresh Basil leaves
-1 Spring of fresh Rosemary, chopped
Place the onion, garlic, and olive oil and fresh rosemary in a soup pot.
Sautee over medium heat until the onions are translucent.
Add the diced tomatoes, tomato sauce, oregano, basil, salt, pepper, vegetable stock and heavy cream and stir to combine.
Simmer for 20 minutes.
Place the three-cheese tortellini into the soup and cook for 12-15 minutes or until the tortellini are tender and cooked through.
Stir in the parmigiano cheese.
Serve and garnish with fresh basil and shredded parmigiano cheese.
