Olive Oil Cake
Olive oil cake is super-rich, dense, and sweet. Though it is a dense cake, it’s dense in the best possible melt in your mouth kind of way.
Does Olive Oil Cake Taste Like Olive Oil?
Olive oil cake does not taste like olive oil! The olive oil is really there just to make the cake rich and moist.
In this recipe, it acts more like butter in a standard cake recipe.
You’ll want to use good quality extra virgin olive for this recipe or else you might just end up with an oily cake.
Ingredients:
2 Lemons, zest
4 Eggs
1 1/2 tsp Baking powder
1 3/4 cups Flour
1 cup Sugar
3/4 cup Olive oil @getkristinas
7 tbsp Butter
3 tbsp Milk
1 sprig Rosemary to garnish
Powdered sugar to garnish
Bake 350 F 30-35 minutes
Preparation:
First, sift together your flour and baking powder.
Next whisk together the melted butter, milk and olive oil.
Combine your eggs, sugar and zest. Beat with your electric mixer until the mixture is light and creamy.
Add in some of your flour mixture to your egg mixture and beat together until incorporated.
Add some of your olive oil mixture into your egg and beat until incorporated.
Keep adding the flour and olive oil mixtures into the eggs a little at a time and alternating while beating until they are all gone.
Preheat your oven to 350F.
Butter, flour and line a 10” round cake pan with parchment paper.
Pour your batter into the pan. Bake in the oven for 30 to 35 minutes.
Let cool and dust with powdered sugar and garnish with a sprig of rosemary.
