Peach & Goat Cheese Crostini

  IT’S PEACH SEASON 

Crisp crostini topped with something delicious can be the perfect way to welcome dinner guests, bridge the gap between brunch and an evening meal. Or it can offer something tasty to snack on during date night.

These peach and goat cheese crostini are so easy to make and absolutely delicious. Crisp crostini topped with a creamy goat cheese blend, fresh juicy peaches, some crumbly toasted almonds and a bit of balsamic come together to create the most addictively scrumptious bite.

I am really quite smitten with it and I’m very sure that you will be too.

Ingredients:

– 1/4 cup herbs, fresh basil, thyme, rosemary

– Abrequina Olive Oil @dressedbyanolive

– 1 Peach, sliced

– 2 tbsp honey

– 1 tbsp lemon juice, fresh

– 1 pinch sea salt & black pepper

– 1/4 cup almonds, toasted and chopped

– Ciabatta bread

– Goat cheese

– 2 tablespoons of balsamic glaze

Preparation:

You have some options when it comes to the crostini.

I usually thinly slice a skinny loaf of Italian bread or a French baguette.

I drizzle the slices lightly with olive oil and toast them on a grill pan or flat skillet until crisp.

You could also place the lightly oiled slices onto a baking sheet and bake them at 350F until crisp.

Or you can buy ready-crisped crostini at your local grocery store’s bakery counter and make this recipe even easier.

Once your crostini situation is settled, thinly slice a large peach, finely chop 1/4 cup of almonds and 1/4 cup of your favourite fresh herbs.

I love thyme, basil or rosemary with the flavours of the naturally sweet peaches and creamy goat cheese.

In a small bowl, combine  goat cheese with 2 tablespoons of honey and 1 tablespoon of fresh lemon juice until smooth and creamy.

To assemble your peach and goat cheese crostini, spread a bit of your creamy goat cheese mixture over each crostini.

Top with a slice or two of peach. Drizzle each crostini with a bit of honey.

Sprinkle some crumbled walnuts and fresh herbs.

 Finally, drizzle with a good, thick balsamic, preferably a balsamic glaze or reduction.

Sprinkle lightly with sea salt and black pepper.

In just a few minutes, you can have a platter of these beautiful peach and goat cheese crostini.

   This is one of my favourite ways to celebrate our local peach season!
