Smoked Salmon Potato Chowder
This smoked salmon and potato chowder is the perfect meal for a cold winter’s night!
Made with fresh smoked salmon and hearty potatoes, this creamy and buttery salmon chowder is the ultimate comfort food.
Ingredients:
smoked salmon
2 large Yukon Gold potatoes (diced)
1 yellow onion (diced)
2 cloves garlic (minced)
water (see preparation)
2 tablespoons butter
2 tablespoons flour
1/4 cup heavy cream
1 tablespoon capers
1 tablespoon dried thyme
salt and pepper to taste
Topped with purple kohlrabi microgreens Ortaliza Urban Farms
Preparation:
Preheat stove to medium. Dice onions, and garlic.
Add 2 tablespoons butter to the pot and sweat your onions, and garlic for about 5 minutes.
Dice your potatoes and add them into the pot.
Sprinkle in 2 tablespoons flour into the pot and stir until it’s evenly coated.
Add your water — just enough to cover potatoes — and then add salt, pepper, capers and thyme.
Cover pot to cook for about 30 minutes.
Flake your smoked salmon or dice it. Add it into the soup along with the cream.
Cook for an additional 5 minutes and then serve.
Enjoy!
