Taste of the County: Creamy Mozzarella Shrimp Pasta

Italian-inspired dinner with the creamiest homemade pasta sauce! The sun-dried tomato pasta sauce is made from scratch using basil, red pepper flakes, garlic, paprika, cream and shredded mozzarella cheese.

This dish is pure comfort while tempting all taste buds.

Creamy Mozzarella Shrimp Pasta

Ingredients:

3 garlic cloves
4 oz sun-dried tomatoes
olive oil
salt
paprika
basil
1 cup half-and-half cream
1 cup mozzarella cheese, shredded
¼ teaspoon red pepper flakes
penne al dente
parsley and chervil microgreens  Ortaliza Farms

Preparation:

TIP: Put a pot on and begin to boil pasta water.

In a large skillet, on medium heat sauté garlic and sun-dried tomatoes in the olive oil.

Season shrimp with salt and paprika.

Add the shrimp to the skillet and cook on high heat.

*Remove shrimp and keep warm. You’ll add it back to the skillet a few steps later.*

In the same skillet, add half-and-half cream and shredded mozzarella cheese.

Bring the mixture to boil, then reduce to simmer.

Stir the sun-dried tomato sauce until the cheese melts.

Add some pasta water here too.

Add spices: basil, crushed red pepper flakes, salt along with the cooked shrimp from earlier.

Add cooked and drained penne rigati al dente pasta.

Stir to combine ingredients.

Top with parsley and chervil microgreens.
