Taste of the County: Butter Pecan Bundt Cake

This beautiful bundt cake combines the flavors of butter, brown sugar, vanilla, cinnamon and pecans. And not only is this cake delicious, but the aroma in your kitchen while this is baking is simply incredible!

Butter Pecan Bundt Cake

~ rich, buttery and delicious!

INGREDIENTS for:

Cake

  • 3 cups all purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg freshly grated
  • 3/4 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk – any
  • 1 cup sour cream
  • 1/2 cup chopped pecans

Glaze

  • 4 tablespoon melted butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 tablespoon dark rum optional, but delicious

Bake 325° F for 60-70 minutes.

Do the toothpick poke.

Enjoy!

PREPARATION for:

Cake

Preheat oven to 325°F .

Grease and flour the bundt pan.

In a medium bowl, whisk together the flour, baking powder, salt, cinnamon and nutmeg.  Set aside.

In the bowl of an electric mixer, blend the butter until fully smooth.

Add both sugars and beat on medium speed for 1-2 minutes.

While still mixing, add the eggs, one at a time, with a few seconds of blending between each egg.

While slowly mixing, slowly add about half the flour mixture, then pour in the vanilla and milk.

Add the second half of the flour and then the sour cream.

Add the pecans and blend until combined.

Pour  batter into prepared pan, using a spatula to smooth the top as needed.

Bake 60-70 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan.

Glaze

Once the cake is cool and has been removed from the pan, prepare the glaze by melting the butter in a medium sized bowl.

Then add the powdered sugar and use a small whisk to combine.

Add the vanilla and rum and whisk.

The glaze will thicken as it sits a room temperature, so you can play around with how thick you want it before pouring it over the cake.

As soon as you’ve added the glaze to the cake, sprinkle with the crumbled pecans.

Allow to the icing to set just a bit, then slice and enjoy!
