Taste of the County: Sweet Potato Spinach Frittata  

If you’re looking for a tasty breakfast, lunch or maybe a brunch idea that will keep you going till dinner, then look no further. This frittata with sweet white onion, spinach, sweet potato and crumbled feta is great hot or cold. Serve it on its own or with a green salad.

The sweet potato spinach frittata is a firm family favourite. It’s packed with flavour, it’s super-easy to make and so versatile.  I hope you give it a try.

Sweet Potato Spinach Frittata

Recipe: breakfast, lunch, brunch

Ingredients:

8 large eggs  Brandner Farms
1 tablespoon half + half
1 thinly sliced sweet potato  Willow Tree Market
chopped fresh spinach
1 cup diced white sweet onion  Willow Tree Market
fresh rosemary
1/3 cup crumbled feta cheese
salt + pepper
1 tablespoon butter

Preparation:

Thoroughly whisk the eggs, cream, adding big pinch of salt and pepper and parmigiano cheese in a large bowl.

Set aside.

Heat butter in a pan over medium heat.

Add onion and a pinch of salt, stirring frequently.

Preheat your oven to 400F to bake your sweet potato slices. Drizzle EVOO, sea salt, fresh rosemary.

The sweet potatoes are ready when they’re tender — do the poke fork test.

Add the garlic and rosemary to the pan and stir for 30 seconds until the garlic is fragrant.

Add the spinach to the pan and stir until just wilted, about 2-3 minutes.

Pour the whisked egg mixture  into the pan.

Use a spatula to lift up the edges of the frittata and tilting the pan to allow the uncooked eggs to fill the space underneath. This helps speed things up, plus evenly cook the frittata.

Once eggs are mostly cooked spread the baked sweet  potato over the eggs and sprinkle the feta cheese over top.

Remove from the pan, slice, and top with a sprinkle of rosemary, and more feta.
