PB & J COOKIES

Peanut Butter & Jelly Thumbprint Cookies — Chewy and delicious peanut butter cookies with jelly thumbprints, baked to golden perfection. First bite into this cookie and it will remind you of the classic peanut butter jelly sandwich we all love.

Mine’s strawberry!

INGREDIENTS:

1/4 cup jelly of choice
1/4 cup peanut butter
2 cups all-purpose flour
1/2 tsp baking soda
1/4 cup brown sugar
1/2 cup white sugar
1/4 tsp salt
1/2 tsp vanilla extract
2 tbsp vegetable oil
1/2 cup butter

PREPARATION:

In the bowl cream together brown sugar, white sugar, butter, vegetable oil and peanut butter until creamy.

Add the egg and vanilla extract and mix to combine.

Add flour, salt and baking soda and mix over until all ingredients are well incorporated.

Place dough in the fridge for 30-45 minutes to chill. While your dough is chilling, place jelly on the counter to get to room temperature.

Preheat oven to 375 degrees.

On a lined baking sheet with parchment paper, roll dough into a ball and place on the sheet.

Using your thumb gently press the center of each cookie dough ball. **Be sure NOT to press all the way through to the bottom of the cookie.

Fill each thumbprint with a 1/2 tsp of jelly.

Bake cookies for 10 minutes until lightly golden.

Transfer cookies to a cooling rack and let cool completely.

NOW JUST POUR YOURSELF A GLASS OF  MILK AND ENJOY

  1. My jam go to is strawberry. I can personally attest these cookies need to come with a warning…you WILL eat them all. Delicious with a glass of milk.
