Taste of the County: Lentil Lunch

Lentil Lunch

This meal is hearty, healthy, and a creative way to eat more protein in your diet! Lentils and eggs topped with handfuls of microgreens.

Ingredients

1 cup of cooked brown lentils
eggs — add as many as you want
1/4 cup shredded cheese
1 Cup cherry tomatoes diced
3 garlic cloves minced
1/2 small white sweet onion
1/2 tsp cumin
1/2 tsp chili powder (optional)
salt & pepper to taste
2 tbsp extra virgin olive oil @dressedbyanolive
microgreens @ortalizafarms

Preparation

Preheat oven to 350 F.

In a pan, add the olive oil, onion and the garlic. Cook till garlic is fragrant, about 2 minutes.

Add the diced tomatoes. Allow to cook down until tomatoes become tender.

Season with salt and pepper. This should take about 8-10 minutes.

Then add the lentils to the tomatoes.

Season with cumin, chili powder, salt and pepper. Mix together.

In a small oven-safe pan, add the lentil mixture evenly.

In the center, make a small hollow area for the egg. Crack eggs into the spot.

Place in the oven for 10 minutes or so till egg is cooked to your liking.

Take out and scatter the shredded cheese.

Put back in the oven for 2 minutes until the cheese is melted.

Take out and add microgreens @ortalizafarms
