Rich, moist, soft, gooey, and ultra fudgy chocolate zucchini bread, is perfect for a healthy breakfast or dessert!
Sneaking the nutrition-packed zucchini into the recipe adds so much softness and moisture. Now — isn’t eating your vegetables sweet?
Chocolate Zucchini Bread
Ingredients:
1 cup flour
1/2 cup cocoa powder
3/4 cup light brown sugar
1 tsp baking soda
1/2 tsp salt
2 large eggs, room temperature
1 1/2 packed cup finely grated zucchini
1/4 cup unsalted butter, melted and slightly cooled
1/4 cup coconut oil
1 tbsp vanilla extract
1 cup mini or regular semi-sweet chocolate chips
Preparation:
Preheat the oven to 350 F.
Grease a loaf pan.
Stir together all dry ingredients in a large mixing bowl.
Add remaining ingredients, and stir to form a batter.
Smooth into the loaf pan.
Press some extra chocolate chips into the top if desired.
Bake on the center rack 50 minutes.
Let cool completely, then very loosely cover and refrigerate.
If at all possible, I highly recommend not even tasting this until the next day, as the flavor and texture are both so much better then.
If you try the recipe, don’t forget to leave a comment.
Enjoy!

Kathy this is wonderful to hear. Thank you for always reading my recipes and most importantly trying them. ❤️
is this supposed to be 3/4 cup brown sugar?
Hi Ruth.
Thanks for the question and interest in the zucchini bread. That measurement has been changed from tsp. to cup now.
Yes, I’ve used 3/4 C light brown sugar in this recipe, but I’m sure if you don’t have that on hand white sugar is fine.
Let me know what you think if you try the recipe.
Enjoy! ☺️
