Taste of the County: Vegetable Soup

Here’s a classic, quick and easy soup recipe. It’s home-made with simple ingredients in one pot, and on the stovetop in 30 minutes. It’s loaded with vegetables, broth and pastina.

This soup is going to warm your soul. It’s delicious and comforting, especially during cold fall days.

Vegetable Soup

Ingredients:

-4 celery stalks chopped
-2 carrots chopped
-2 large potatoes cubed
-1 large cooking onion diced
-1 cup cherry tomatoes
-8 cups water
-parmigiano cheese rind (optional)
-salt and black pepper
-1/2 cup stelline or other pastina
-EVOO
– kale microgreens  Ortaliza Farms
-toasty crusty bread

Preparation:

Add a tablespoon of extra virgin olive oil in a large stock pot.

Add your chopped onion, carrots and celery.

Simmer vegetables for a few minutes.

Add your cubed potatoes.

Add your 8 cups of water — ensure veggies are covered.

Add 1 cup of cherry tomatoes.

Add a parmigiano cheese rind if you have it– —it flavours the soup deliciously.

Add your salt and black pepper.

Simmer  until all vegetables are tender.

Cook small pasta separately — I cooked 1/2 cup stelline.

Scoop soup into a bowl and add as much pastina/ stelline as you like.

Top with kale microgreens and serve with warm, crusty toasted bread.
