This is an easy cauliflower San Marzano tomato sauce with fresh garlic, white onion and parmigiano cheese recipe. It’s a sauce so incredibly delicious you will want to lick it from the spoon!
Try this veggie-packed dish for a healthier alternative. Florets of cauliflower simmer in a spicy tomato sauce, then orecchiette pasta is added and topped with parmigiano cheese and fresh parsley microgreens.
Creamy Cauliflower Tomato Sauce Pasta
Ingredients:
-head of cauliflower
-bottle of San Marzano passata
-small pasta of choice : I used orecchiette
-parsley micro greens Ortaliza Farms
-fresh basil
-parmigiano cheese Galati Cheese Company Ltd.
-salt
-red pepper flakes
-EVOO
-garlic clove
-white onion
Preparation:
-Heat oil in a large pan over medium-high heat.
-Add onion and saute until beginning to soften but not brown, 2 to 3 minutes.
-Stir in garlic and cook another minute. Add red hot pepper flakes for zing (optional).
-Add the cauliflower florets, salt and fresh basil leaves to taste.
-Cook and stir another minute to combine.
-Add one bottle of San Marzano tomato passata
-Simmer until cauliflower is tender.
-Add one cup of water (rinse the bottle of passata).
-Cook orchettiette pasta in sauce adding only one cup of water.
-Top with parmigiano cheese and parsley microgreens.
