Taste of the County: Lemon Summer Cake

This soft and moist cake is a quick and easy dessert recipe, perfect for summer. This cake is soft and creamy, with refreshing lemon flavour. It’s melt-in-your-mouth good!

If you like light and creamy desserts then this recipe is a must have for you to try.  In my opinion, this cake is best served chilled.  I recommend refrigerating for a few hours.

Lemon Summer Cake

Ingredients:

4 eggs

1 C sugar

2 and 1/4 C flour

1/2 C vegetable oil

1/2 C milk

1 lemon zest

2 tsps baking soda

1 vanilla powder package (see picture below)

pinch of salt

2 C custard to dollop on top of cake batter

Preparation:

Mix the eggs and sugar well. Add oil and milk.

Combine lemon zest and pinch of salt.

Sift in two parts flour and baking powder.

Add Paneangeli Vanillina sachet.

Pour cake batter into a greased cake pan.

Dollop your custard cream. (This is the best part!)

Bake at 350 F for 40 minutes.

Plate and dust with powdered sugar.

  2. I don’t see any lemon juice on the recipe. Is this missing? How do you get a lemon flavour with just some lemon peel?

      Hi Jan. Thanks for your comment and questions. I only added the zest of one lemon to give it a light lemon flavour as the custard steals the show in this cake. It’s a personal preference.

      You can add the juice along with the zest of one lemon if you’d like to create a strong lemon flavoured cake.
