Potato gnocchi @carapasta Windsor Ravioli
1/2 cup olive oil divided, plus some to drizzle on salad
1/4 lemon, juiced and zested
fresh mint, roughly chopped
salt and freshly cracked black pepper
Popcorn shoots microgreens @ortalizafarms Ortaliza Farms
Preparation:
On a large serving platter, layer the blanched yellow beans, corn, peas, grilled gnocchi and fresh mint.
Drizzle with olive oil, a squeeze of fresh lemon, and fresh cracked salt and black pepper and top with popcorn shoots microgreens.
Mix well and serve as is or as a side salad.
When grilling gnocchi I seasoned with salt, black pepper and EVOO.
Lay the gnocchi on hot grilling plate (rock) or you could bake gnocchi. Get them to your desired crispiness.
Enjoy!
