Taste of the County: Zucchini Flower Fritters

This recipe for Zucchini Flowers Fritters is so easy to make and requires only a few ingredients. It’s great for breakfast or brunch. The fritters are loaded with grated zucchini in an egg mixture with parmigiano cheese and shredded mozzarella cheese.

Zucchini Flower Fritters

Recipe: breakfast, lunch, brunch, snack

Ingredients:

4 large eggs Brandner Farms @branderfarm 
2 zucchini (shredded)
6 zucchini flowers (chopped roughly) Raymont’s Berry Farm @raymontberries
1/4 C flour
1/4 C parmigiano cheese
1 mozzarella ball shredded Galati Cheese Company Ltd.
1 tsp salt

Preparation:

Beat eggs, garlic, chopped zucchini flowers and parmigiano cheese.

Season with salt and pepper.

Add grated zucchini. Mix well.

Stir in flour.

Heat oil in a large skillet and add zucchini mixture.

Cook 2-3 minute per side.

Flip gently.
