Taste of the County: Minestrone Verde

Brothy and light, this is a perfect summer soup. Pesto adorns each bowl with a burst of herbal freshness. This minestrone is filled with all green vegetables and topped with basil microgreens and sprinkled with parmigiano cheese.

You may add small pasta, tortellini or — like I did — ricotta spinach ravioli. Nothing feeds the soul like a bowl of minestrone verde on a summer day.

Minestrone Verde

Recipe: lunch, dinner

Ingredients:

1 C coarsely chopped fresh basil
Basil micro greens (generous amount)
Ortaliza Farms
2 tablespoons shredded Parmigiano-Reggiano cheese
Galati Cheese Company
1 tablespoon pesto
1 garlic clove, chopped
Some garlic scraps
Raymont’s Berries
2 tablespoons EVOO
1 C  thinly sliced leeks
2 small zucchini, sliced into half-moons
Remark Fresh Markets
4 C water
3 C coarsely chopped fresh baby spinach
1 C fresh green peas
1 C green flat beans1/4 teaspoon kosher salt
1/4 teaspoon black pepper
tortellini, ravioli or small pasta (optional)
Windsor Ravioli

Instructions:

Heat 2 teaspoons oil in a medium pot over medium.

Add onion, garlic and garlic scraps. Cook stirring often until softened, about 6 minutes.

Stir in zucchini and green flat beans. Cook stirring occasionally, until zucchini is just tender but not browned, about 4 minutes.

Add water and increase heat to medium-high. Bring to a boil. Reduce heat to medium-low, and simmer 8 minutes.

Meanwhile, cook pasta of your choice in a stockpot of boiling water 3 minutes less than package directions.  Drain.

Add pasta, spinach, fresh basil and peas to soup. Cook until spinach is wilted, about 1 minute.

Add salt and pepper. Ladle soup into bowl.

Top each serving with pesto and basil microgreens, and sprinkle parmigiano reggiano cheese.
