Chickpea taco! This soft tortilla wrap is piled high with fresh delicious ingredients and topped with a homemade creamy cilantro lime dressing.
Begin layering Red Pac Choi microgreens, purple raw cabbage, purple onion, avocado, chick peas, and homemade fresh cilantro lime dressing. Squeeze some lime juice and fold and have the most flavourful bite.
Loaded Chickpea Taco
Recipe: lunch, snack
Ingredients:
-Red Pac Choi microgreens
Ortaliza Farms
-Red Cabbage
-Purple Onion
-Avocado
-Cilantro (fresh)
-Chickpeas ( 1 can Unico)
Remark Fresh Markets
-Tortilla Wraps
-Creamy Cilantro Lime dressing *(homemade…see recipe below)
Instructions:
Heat a small amount of oil in a pan over medium heat.
Add the chickpeas, garlic powder and fresh cilantro to the pan.
Cook for 2-3 minutes.
Remove the pan from the heat.
Heat the tortillas in the microwave or over an open flame. (Optional, but I love a warm tortilla!)
Time to assemble the tacos!
Layer Red Pac Choi microgreens, chickpeas, red onion, raw red cabbage, avocado, fresh cilantro and homemade cilantro lime dressing on each tortilla.
Squeeze lime juice over top and serve.
Repeat because you can’t eat just one.
Cilantro Lime Dressing
Recipe:
-Bunch of fresh cilantro
-Generous amount of cilantro micro greens
Ortaliza Farms
-1/2 C plain Icelandic yogurt
@siggis
-1/4 C EVOO
-juice of 2 limes
-1 tsp honey
-1 garlic clove
-Salt
-1/2 jalapeño (optional)
Use food processor to combine all ingredients.
