Taste of the County: Grilled Trout and Fennel Side Salad

Plank grilling is one of my favourite ways to cook fish. Steelhead trout grilled on a plank of cedar is probably my most requested dish whenever I am grilling for family. One of the best aspects of grilling on a plank of wood is that it is so easy. In many ways it is close to baking the fish.

Just place it on the plank and rest the plank on the grill and close the lid. Keep your eye on the plank to make sure it doesn’t catch fire. This is why you soak the wood ahead. Other than that, plank grilling is a breeze. No fear of the fish breaking apart as you flip it on the grill.

Grilled Trout and Fennel Side Salad Topped with Sorrel Microgreens

Recipe: lunch, dinner

Ingredients:

– 2 whole trouts
Remark Fresh Markets

– 1 lemon, sliced and seeded

– salt

– black pepper

– chives

– 1/4 cup sorrel microgreens
Ortaliza Farms

Instructions:

1. Heat up grill.

2. Arrange lemon slices in a single layer in the cavity of each fish placed on a cedar plank.

3. Grill the fish for 5 minutes or so until the flesh is opaque.

4. Spread the butter on the warm fillets. (optional)

5. Sprinkle with the sorrel greens.

6. Serve, garnished with fresh lemon slices.

Serve with a shaved fennel arugula salad or side of choice.

** Sorrel microgreens complements fish beautifully. Its delicate fragrant citrus taste is delightful.

Fennel Cucumber Salad

– 1 fennel bulb shaved or finely sliced

– 1 cucumber thinly sliced

– 1 lemon zested & juiced

– salt

– black pepper

Top with sorrel microgreens.

This salad is crisp and crunchy and perfect served with grilled fish, chicken or meat.

With warm weather arriving this makes a wonderful meal.
