Maybe you’re trying to avoid dairy, wheat and gluten, or maybe you just like trying new things. And just maybe you are going to love these pancakes. This recipe replaces wheat with almond flour. Instead of the traditional milk it calls for almond milk. Coconut oil takes the places of the usual butter. But trust us, you won’t miss a thing!
Almond Flour Pancakes

Ingredients:
2 eggs
1 cup almond flour
1/4 cup almond milk
1/2 tsp. baking powder
1 tsp. vanilla
1 tsp. coconut oil (melted)
1/4 tsp. salt
1 tbsp. maple syrup
Instructions:
Blend all the ingredients with an immersion blender. Heat a frying pan on low- to medium-high heat. Add 4 tbsp. of batter at a time and begin to flip the pancakes when the edges turn a golden brown.
You can also add fresh blueberries or even a few chocolate chips if you’re feeling like something a bit more decadent! Oh, and don’t forget to top them off with a drizzle of maple syrup!
