Regan’s Recipes: No-Bake Chocolate Almond Truffles

Recipe Type: Dessert

Special Diet: Vegan, Gluten Free, Paleo

Ingredients:

1/3 cup pitted medjool dates

1/3 cup raw cashews (soaked for 2-3 hours and drained)

1/2 cup unsweetened cocoa powder

1/4 cup coconut sugar

3 tbsp. nut butter

1 tsp. vanilla

1 tsp. water

1/4 cup ground almonds for coating

Directions:

In a food processor, mix the dates and cashews.  Once ground, add in the nut butter, cocoa, sugar, vanilla and water.  Pulse well until combined. If needed, add 1 tsp. of water at a time until the mixture holds together.  Shape into 1 inch balls.  Roll the truffles in ground almonds.  Refrigerate before serving.
